As you may already know, I am working on my Master's degree and it is a load of work, especially with the job that I have. I truly think that anyone can get their Master's as long as they have graduate level writing skills and are able to manage their time wisely. My brain is usually running a million miles per hour with all of the things that I have to get done. What helps me sort everything out is a planner. Now I know that people might think that a paper planner is old news, but I am one of those people that likes to see things mapped out in front of me in pretty colors in order to feel organized.
At the beginning of this school year I purchased a teacher planner from www.erincondren.com. I loved it, until I realized that the way my district submits lesson plans was easier to follow than to pass it over to my planner. I planned for a few weeks, and then I let it go. I wanted to take this planner everywhere to jot down important dates for school and work, but it was not the best idea since the planner is quite bulky. There just came a day where I stopped using it. Do not get me wrong, it's a great planner, but it was not for me. I loved the checklist in the back, which is where I put in my grades. Other than that, I found no more use for the entire planner.
I've been going for months without a planner and I feel like my brain is frazzled. After seeing a lovely youtuber (Belinda Selene) and her new life planner, I knew I had to get back to my planning ways. This time I ordered a life planner, which is smaller and has more of what I need. I am currently waiting for my planner to arrive, so when it does I will give you a full view of what's inside of it. I'm so excited because Erin Condren's products are so gorgeous and I know I'm going to put this planner to good use!
On to "Meatless Monday." I have been seeing several pins and posts about Meatless Monday and I have been intrigued. I'm not meat's biggest fan, so leaving meat out is no biggie for me. Today I decided to whip up a simple recipe using eggplant. Everytime I go to the grocery store I see this plump, purple mass and I just want to take a bite out of it. It always looks so delicious!
I have only had eggplant once in my life in Italy a few years ago. I ordered a plate that had pasta, cheese, mushrooms, cream, tomatoes and eggplant. That plate was ridiculously delicious. The flavors were so fresh and and the eggplant taste was something new for me. I would like to show you this dish, but all my Italy pictures are stored on a computer that has permanently messed up and has no charger :(
So today I will show you how I made my eggplant delight. I will tell you, eggplant has a bit of a tangy taste and the skin is quite tough. I cooked the meal with the skin, but you are welcome to take it off.
What you'll need:
1 eggplant (sliced in half)
1/4 onion, diced
1/2 small tomato, diced
2 tablespoons of feta cheese
drizzle of olive oil
1 clove of garlic, sauteed (not burnt!)
Mrs. Dash Onion & Herb seasoning (it's salt free)

Get cookin'!
1. Preheat your oven to 350 degrees.
2. Line a baking sheet with foil paper.
3. When the eggplant is cut in half and the ends are off, scoop out some of the flesh on each half so that you are able to place the other ingredients in there. It's kind of like if you're making a little bowl.
4. Place the diced onion and diced tomato in the "bowl" part of the eggplant.
5. Add the onion & herb seasoning.
6. Drizzle with olive oil to keep the eggplant moist.
7. Place in the oven for 35-40 minutes. The eggplant should be soft when you poke it with a fork.
8. Sautee one clove of garlic in oilve oil and place the sauteed garlic on the eggplant pieces.
9. Top it all off with a tablespoon of feta cheese on each half.
* I made the tiny mistake of adding the cheese in the beginning so it came out super crispy. If you're okay with that then do what you'd like.
All done and ready to eat. I added a side of fresh greens and shredded carrots with lime juice and a tiny drizzle of olive oil.
The eggplant was filling and tasty. I was tempted to add some Sriracha, but I need to lay off of that. It's too addicting.
This was my meal after my 1.5 hour long stay at the gym. I walked on an incline, ran a little, hopped on the eliptical and did the arm workouts that my trainer taught me along with the ab exercises. I can't believe I still had energy to buy some groceries after all that.
Little tip: Since you know I'm always running, I used my time wisely and cooked a pound of turkey meat while the eggplant was baking in the oven. I'll use the turkey meat throughout the week and it will save me a ton of time since it is already cooked. All I have to do is whip it up with something and eat it.

I've been feeling great and I know it's because of the changes I've made. I'm not dieting nor am I starving myself. I'm being wise about what I consume and trying to fill my body with things that are nutritious and won't go straight to my huge hips! Writing this out truly keeps me motivated because I know people are watching, and even if some of them don't know me, I don't want them to see me as a failure. I'm taking medium steps (not baby) to get to where I need to be. Someday I'll be there, but for now I've got to keep working my behind off!
